Stuffed Leftover Easter Eggs

Don't let those colorful easter eggs go to waste. Here are some simple ways to turn them from beautiful to delicious!

8 hard boiled eggs, peeled.

Slice lengthwise, remove yolks and place them in a small mixing bowl. Mash yolks with 1/4 cup mayonnaise and 2 Tbsp. milk.

Mix in one of the following flavor combinations:

2 Tbsp. garlic herb cheese and 1 tsp. fresh basil
1 Tbsp. chopped green chile and 3 Tbsp. Colby jack shredded cheese
2 Tbsp. crumbled bacon and 1 tsp. chopped green onion
2 tbsp crumbled feta cheese, 1 Tbsp chopped black olives and 1/4 tsp. fresh rosemary
2 tbsp grated apple and 1 tsp chopped onion

Using a teaspoon, fill each white half with filling. Place on a plate and serve.

That sounds like minor variations to the classic "deviled eggs" my wife makes, (the same as my mother and grandmother used to make).
