2 egg whites
1 tablespoon canola oil
11/2 cups skim milk
1 teaspoon dried basil
1/8 teaspoon cayenne pepper
1 cup whole wheat flour
1/2 cup all-purpose flour
Preheat an oven to 450°F and coat a muffin tin with nonstick cooking spray.
Whisk the egg, egg whites, canola oil, milk, basil, and cayenne pepper in a mixing bowl. Add both the whole wheat and all-purpose flour, whisking until completely smooth.
Fill each muffin cup halfway full and bake for 30 minutes or until popovers are brown and puffy.
Remove and serve immediately.
