1 seedless cucumber
½ cup peas
¼ cup reduced fat sour cream
¼ cup hummus
1 tablespoon horseradishmustard
1 sprig fresh dill
Cut the cucumber into 12 two-inch thick disks. Remove some cucumber from the disk making a bowl shaped indent. Place the cups on a sheet of paper towels to dry.
Blend the peas, horseradish mustard, and sour cream to make a paste.
Fill each indented cucumber disk with 2 teaspoons of hummus, and top the hummus with the pea paste.
Add a piece of fresh dill on top.
