Ingredients

  • 8 ounces penne pasta

  • 1/2 teaspoon fresh ginger, grated

  • 1 clove garlic, minced

  • 1 tablespoon toasted sesame oil

  • 3 cups broccoli slaw mix

  • 2 cups fresh mushrooms, sliced

  • 1/4 cup teriyaki sauce

  • 1/4 cup green onion, thinly sliced

Directions

  • In a large saucepan, cook the pasta according to the package directions. Drain the pasta in colander, then return to large saucepan.

  • In a large skillet, add oil and heat over medium-high heat. Add ginger and cook for 15 seconds. Add the shredded broccoli, mushrooms, and teriyaki sauce. Cook for 5 minutes or until the broccoli is crisp-tender, stirring occasionally.

  • Add the pasta, vegetable mixture, and green onions to a large serving bowl and toss to combine. Serve immediately.
