One 15-ounce can navy beans or pinto beans
1 cup cooked or canned sweet potatoes, mashed
1/2 cup plus 3 tablespoons packed light brown sugar, divided
2 eggs
2 tablespoons butter or margarine, melted
1/2 cup fat-free milk
1 teaspoon baking powder
1 1/2 teaspoons pumpkin pie spice
1/8 teaspoon salt
Grated rind of 1/2 orange
2-4 tablespoons pecans, chopped
Combine the beans, sweet potatoes, and eggs, and 1/2 cup of the brown sugar, in a food processor until smooth. Add the eggs, butter, milk, baking powder, pumpkin pie spice, salt, and orange rind and process until blended.
Add the mixture to a greased baking pan and add with the remaining 3 tablespoons of brown sugar and pecans.
Bake at 350°F (uncovered) for about 1 hour or until browned and puffed.
