Ingredients

  • 8 ounces elephant beans

  • 3 cloves garlic

  • 2 tablespoons olive oil

  • 1 teaspoon oregano

  • 1/4 teaspoon salt

Directions

  • Soak the beans overnight and drain them. Smash and peel the garlic.

  • In a large pot, combine the beans, oregano, and garlic and cover with 2 inches of water.

  • Set the stove to high heat and bring the water to a boil. Reduce the heat to a simmer and partially cover and cook the beans until they are tender (about 45 minutes).

  • Add more water while cooking if the water level falls below the beans. Drain all of the water from the beans. Add salt and oil into the beans, and carefully stir the mixture to combine.
