Ingredients

  • 1 and 1/2 pounds potatoes

  • 2 medium avocados

  • 1 tablespoon margarine

  • 1/2 cup nonfat milk

  • 1 dash lemon juice

  • Salt, black pepper, and garlic powder to taste

Directions

  • For preparation of the potatoes, peel the skin, rinse with water, and then place all of them in a large cooking vessel with just enough cold water to submerge them.

  • For preparation of the avocados, remove the pit and scoop the flesh out of the skin into a bowl with the lemon juice. Stir until well blended.

  • Place measured amounts of milk and margarine in a bowl and microwave just enough to be melted.

  • Cook the potatoes over medium heat for about 25 minutes.

  • Place the softened potatoes into a large bowl and mix either by hand or with a mixer.

  • Mix the margarine spread and milk mixture slowly into the potato mash.

  • Mash the potatoes to individual taste and add in the avocado mixture.
