Ingredients

  • 3 cups dried split peas

  • 7 cups water or vegetable stock

  • 1 bay leaf

  • 2 teaspoons salt

  • 1 teaspoon dry mustard

  • 2 cups onions, minced

  • 4 medium garlic cloves, minced

  • 3 stalks celery, minced

  • 2 medium carrots, sliced

  • 1 potato, diced

  • Freshly ground pepper

  • 1-4 tablespoon balsamic vinegar or to taste

Directions

  • Add the peas, water or vegetable stock, bay leaf, salt, and mustard into a large pot.

  • Bring to a boil then reduce to a simmer.

  • Partially cover the pot for about 20 minutes, stirring occasionally.

  • Mix in the onions, garlic, celery, carrots, and potato. If desired, sauté these ingredients first.

  • Keep partially covered and cook on low heat for about 40 minutes. Stir occasionally. Add extra water if needed.

  • Add pepper and vinegar as desired for taste.
