1 cup part-skim ricotta cheese
1 tablespoon honey
1/2 teaspoon pure vanilla extract
3 tablespoons balsamic vinegar
11/2 tablespoons brown sugar
16 ounces strawberries
1 tablespoon fresh basil
Add the ricotta cheese, honey, and vanilla to a mixing bowl and mix thoroughly until the consistency is smooth. Chill for at least 2 hours.
Dissolve the brown sugar in balsamic vinegar in a saucepan and bring to boil. Turn heat down to simmer and continue to cook for an additional 3 minutes. Pour into a separate bowl and chill completely.
Add the strawberries and basil to the chilled balsamic vinegar and brown sugar syrup.
To serve, spoon layers of strawberries alternating with ricotta cream in a glass and garnish with basil.
