Ingredients

  • Main

    • 1 head broccoli, chopped

    • 2 carrots, chopped

    • 16 ounces (2 bags) of shirataki noodles

    • 3 garlic cloves, minced

    • 1/4 onion, chopped

    • 1 cup straw mushrooms

    • 1 chicken breast, chopped

    • 2 green onions, chopped

  • Sauce

    • 1/4 cup soy sauce

    • 1/2 cup fresh lime juice

    • 2 tablespoons peanut butter

    • 2 tablespoons hot sauce

    • 1/4 cup artificial sweetener

Directions

  • Steam or pan-fry the broccoli and carrots. Set aside.

  • Rinse the noodles with cool water. Set aside to drain.

  • Mix the sauce ingredients together and microwave for 20 seconds to allow peanut butter to dissolve.

  • In oil on a hot skillet, cook the minced garlic and onions. Add the mushrooms, broccoli, carrots, and chicken. Cook for two minutes, then add half of the sauce to the skillet.

  • Add the noodles and remaining sauce, cooking for two more minutes.

  • Garnish with green onions.
