Ingredients

  • One 3-ounce package ramen noodles (any flavor)

  • 2 large eggs

  • 2 green onions, finely chopped

  • 1/2 teaspoon sesame oil

  • 1/2 teaspoon soy sauce

  • 1/2 teaspoon baking powder

  • 3 tablespoons butter, divided

Directions

  • Following the package instructions, cook the ramen noodles then drain into a colander.

  • Add the next five ingredients (eggs through baking powder) to a small bowl, and whisk. Add 1/2 of the seasoning from the ramen packet to the bowl, and mix with a fork until well combined.

  • Place a medium skillet over medium-high heat, and melt the butter. Place the drained noodles in the skillet. Without stirring, allow the noodles to brown for 2-3 minutes.

  • Cover the noodles with the egg mixture, using a fork to gently incorporate the egg into the noodles. When the eggs have set, flip the noodle patty. Cook for an additional two minutes or until the eggs have set completely. If needed, re-flip the patty again, and cook for an additional minute. Serve immediately with extra soy sauce, if desired.
