Ingredients

  • 1 cup quinoa, cooked

  • 3 cups black beans, cooked (can use two 15 ounce cans, drained and rinsed)

  • 2 large sweet potatoes, shredded

  • 1 cup cheddar cheese, shredded, low-fat

  • 1 tablespoon cumin, ground

  • 2 eggs

  • 1 cup salsa

  • 2 tablespoons cilantro, fresh, chopped for garnishing

  • Pinches of salt and black pepper

Directions

  • Set an oven to preheat to 350°F and spray 9x9-inch casserole dish with nonstick spray.

  • In a large mixing bowl, add the black beans, quinoa, shredded sweet potatoes, 1/2 cup of shredded cheese, salt, pepper, and cumin and mix well. In another bowl, mix the salsa and eggs.

  • Combine the salsa mixture with the vegetables and pour the final mix into the casserole dish.

  • Add the remaining 1/2 cup of cheese on top of the mixture and bake for about 30 minutes.

  • After 30 minute, remove from the oven and sprinkle the cilantro.
