Ingredients

  • 4 cups cooked chicken, shredded

  • 1 cup cheddar cheese, shredded

  • 2 eggs, beaten

  • 1/4 onion, chopped

  • 1-2 teaspoons bread crumbs

  • Salt and black pepper to taste

  • Olive oil

Directions

  • In a medium-sized bowl, combine the cheddar cheese and chopped onion. Add the shredded, cooked chicken to the mixture, stirring well, and add salt and pepper to taste.

  • Using hands, form small, even balls. Coat the balls with the beaten egg and then roll in bread crumbs.
