Ingredients

  • 2 boneless chicken breasts

  • 1/2 cup apple, chopped

  • 2 tablespoons cheddar cheese, shredded

  • 1 tablespoon bread crumbs

  • 1 tablespoon butter

  • 1/4 cup dry white wine

  • 1/4 cup and 1 tablespoon water

  • 1 1/2 teaspoons cornstarch

  • 1 tablespoon fresh parsley, chopped

Directions

  • In a large bowl, mix the apples, cheese, and bread crumbs together.

  • Slice the chicken breast to ¼ inch thickness and spread the apple mixture over the chicken breasts. Roll the chicken and place a toothpick in the chicken to keep its shape.

  • Over medium heat, brown the chicken in butter for 2 minutes.

  • Pour the wine and water in the skillet and cover. Cook for 15-20 minutes.

  • Remove the chicken to plates, reserving the sauce.

  • Add 1 tablespoon of water to the cornstarch, and mix into the sauce in the skillet, allowing it to thicken.

  • Pour the sauce over chicken and add parsley for garnish.
