Ingredients

  • 2-3 cups new potatoes, cubed

  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon Dijon mustard

  • 2 tablespoons red wine vinegar

  • 1 tablespoon prepared horseradish

  • 1/4 cup flax oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2-3 cups cucumber, cubed

Directions

  • Boil the cubed potatoes in water until easily pierced with a fork.
