Ingredients

  • 1 pound ground turkey breast

  • 2 large egg whites

  • 1/4 cup whole-wheat bread crumbs

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 2 teaspoons olive oil

  • 1 cup fresh or frozen yellow or white corn

  • 2 cups tomatoes, diced

  • 1 15-ounce can low-sodium black beans, drained and rinsed

  • 1/2 cup low-sodium chicken broth

  • 1 tablespoon fresh lime juice

  • 1 teaspoon ground cumin

  • 1/4 cup fresh cilantro, chopped

Directions

  • Add the turkey, egg whites, bread crumbs, salt, and pepper to a large bowl. Mix well then shape into 16 meatballs.

  • Heat the oil in a large skillet on medium-high heat. Add the meatballs to skillet and cook for 3-5 minutes, turning frequently. Meatballs should be brown on all sides.

  • Add the corn, tomatoes, beans, chicken broth, lime juice, and cumin to the skillet and mix well. Partially cover the skillet and reduce the heat to medium. Cook for another 3-5 minutes, until the meatballs are cooked all the way through.

  • Stir in cilantro and serve.
