Ingredients

  • 1/2 large ripe cantaloupe

  • 3/4 cup red bell pepper, finely diced

  • 1/4 cup cilantro, finely chopped

  • 3 tablespoons scallions, finely chopped

  • Juice of 1 lime

  • Pinch of salt and red pepper flakes

Directions

  • Cut off the cantaloupe rind and scoop out the seeds. Finely dice the cantaloupe.

  • Combine the finely diced cantaloupe, finely diced red bell pepper, finely chopped cilantro, and finally chopped scallions in a large mixing bowl. Add the lime juice, pinch of salt, and pinch of pepper flakes.

  • Stir all the ingredients until well combined. This salsa may be served as a side or topping with chicken, fish, or steak as well as with chips.
