Ingredients

  • 1 medium onion, chopped

  • 2 cloves garlic, crushed

  • 2 cups mushrooms

  • 2 cups vegan meatless burger crumbles

  • 2 cups canned tomatoes

  • 1 cup vegetable broth

  • Several sprigs fresh tarragon

Directions

  • Begin by sautéing the onion in olive oil in a pan over medium heat until it starts to soften. Add the garlic and cook for approximately 3 minutes. Add the mushrooms and cook them until they give off liquid.

  • Add the crumbles, tomatoes, vegetable broth, and tarragon. Bring to a boil, reduce heat, and simmer, uncovered, for 10-15 minutes or until desired thickness is reached.
