Ingredients

  • 2 cans tuna, drained

  • 1/2 cup refried beans

  • 1/2 cup low-fat sour cream

  • 1/2 cup canned corn, drained

  • 2 tablespoons hot sauce

  • 1 tablespoon garlic, minced

  • 1 teaspoon cumin

  • 1 tablespoon butter

  • 4 whole-wheat tortillas

  • 1/2 cup shredded Mexican cheese blend

Directions

  • In a large bowl, combine the tuna, beans, sour cream, corn, hot sauce, minced garlic, and cumin.

  • Melt the butter in a skillet over medium high heat and cook each tortilla for 1 minute on each side.

  • Layer the tuna mixture, some cheese, and a second tortilla shell on two of the tortillas in the skillet. Cover and cook for 1 minute, flip, cover, and cook on the other side for 1 minute.

  • Cut into eighths and serve immediately.
