Ingredients

  • 2 cups Monterey Jack cheese, grated

  • 1/2 cup Parmigiano-Reggiano cheese, grated

  • 3/4 cup fresh goat cheese, crumbled

  • 4 flour tortillas, 10-inch

  • 1 tablespoon butter

Directions

  • Combine the cheeses in a medium bowl.

  • Layer the cheeses on top of each tortilla. Fold the tortillas in half and butter the outside of the tortilla.

  • Cook each quesadilla in a non-stick skillet over medium heat until it turns golden brown and the cheese is melted, about 4-5 minutes each side.

  • Serve immediately.
