Ingredients

  • 1 roasted chicken

  • 1 1/2 teaspoons canola oil

  • 1 onion, minced

  • 2 teaspoons curry powder

  • 15 ounces canned lentils, rinsed

  • 14 ounces canned tomatoes, diced

  • 1/4 teaspoon salt

  • 1/4 cup low-fat plain yogurt

Directions

  • Prepare the chicken by discarding the skin and removing the meat from bones. Dice the meat.

  • Heat the oil in a large saucepan and add the onion, stirring until soft. Add the curry powder and stir about 20 seconds.

  • Add the lentils, tomatoes, chicken, and salt, stirring well until heated through.
