Ingredients

  • 2 cups water

  • 1 cup quinoa

  • 1 pinch salt

  • 2 carrots, grated

  • 1 cucumber, diced

  • 3 medium tomatoes, diced

  • 1 cup fresh parsley, chopped

  • 1/4 cup lemon juice

  • 1/2 teaspoon salt

  • 1/4 cup olive oil

  • 2 bunches green onions, diced

Directions

  • In a medium-sized pot, bring the water to a boil and add quinoa with a pinch of salt. Reduce the heat, cover, and simmer until the quinoa is cooked, approximately 15 minutes. Set aside and let cool.

  • In a large mixing bowl, add the carrots, cucumber, tomatoes, parsley, lemon juice, salt, olive oil, and green onions. Mix well.

  • Fluff the quinoa with a fork and combine it with the contents in the mixing bowl.
