Ingredients

  • 1 teaspoon pepper

  • 1/2 teaspoon salt, divided

  • 4 4-ounce boneless pork chops

  • 3 tablespoons all-purpose flour

  • 2 tablespoons extra-virgin olive oil

  • 1 medium shallot, minced

  • 1/2 cup brandy

  • 1/4 cup reduced-fat sour cream

Directions

  • Prepare the pork by trimming and ensuring a 1/2-inch thickness.

  • In a bowl, add the pepper and 1/4 teaspoon salt. Sprinkle the combination onto each side of the pork chops.

  • In a shallow dish, add the flour. Cover each chop thoroughly and remove any excess by shaking.

  • Over medium-high setting, heat the oil in a large skillet.

  • Reduce heat to medium and add pork. Cook the pork until browned, about 2-3 minutes per side. Move the cooked pork to a plate and cover with foil to keep warm.

  • Decrease the heat to medium-low and add the shallots, stirring until softened (about 1 minute). Add the brandy to the skillet and stir until most of the brandy has evaporated.

  • Remove the skillet from heat and stir in sour cream and remaining salt.

  • Serve cooked pork with the prepared sauce.
