Ingredients

  • 1 pound tiger prawns or jumbo shrimp, deveined, peeled, tails intact

  • 1 tablespoon oil

  • Marinade

    • 2 tablespoons fish sauce

    • 1 bulb lemongrass, grated

    • 1 tablespoon powdered sugar

    • 1 teaspoon chili sauce

    • 1 large clove garlic, finely minced

Directions

  • Wash the shrimp, pat dry.

  • Combine all marinade ingredients and marinate the shrimp for 15 minutes.

  • Skewer three shrimp with either metal or bamboo skewers (soak bamboo in water before using). Brush the shrimp with oil. Grill the shrimp until charred on one side. Flip and char on the other side.
