Ingredients

  • 5 cups water

  • 2 cups black beans

  • 1 can (14.5 oz) tomatoes

  • 1 chopped onion

  • 1 chopped green bell pepper

  • 3 cloves garlic

  • 2 tablespoons red wine vinegar

  • 1 1/2 teaspoons salt

  • 1 teaspoon cumin

  • 1/2 teaspoon oregano

  • 1 bay leaf

Directions

  • Combine the black beans, tomatoes, onion, green pepper, garlic, salt, cumin, bay leaf, and water into a large slow cooker.

  • Cover and cook on high for four to six hours or on low for eight to ten hours, stirring occasionally.

  • Remove the mixture and stir in the red wine vinegar. The beans are ready to serve.
