1 cup cornmeal
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups skim milk
2 large egg whites, lightly beaten
Preheat oven to 400°F, and spray an 8 x 8- or 9 x 9-inch pan with cooking spray and set aside.
In a bowl, mix the cornmeal, flour, baking powder, and salt. Add the milk and egg whites, stirring just until combined. Pour mixture into the pan and bake for 20 minutes or until a toothpick inserted in the middle comes out clean.
