1 cup dry lentils
2 14 ounce cans diced tomatoes
4 cups water
2 garlic cloves
Dash of curry powder
Dash of salt
Add all ingredients except the curry powder and salt to a stock pot and stir.
Bring the mixture to a boil then lower to a simmer for approximately 20-30 minutes.
Remove the pot from heat when lentils are soft. Season with curry powder and salt.
