Ingredients

  • Roll

    • 1 1/2 pounds extra lean ground beef

    • 3/4 cup Italian style bread crumbs

    • 1 egg

    • 1 teaspoon salt

    • 1/5 teaspoon black pepper

  • Topping

    • 1 cup tomato sauce

    • 1/2 tablespoons mozzarella cheese

  • Filling

    • 1 package 10oz spinach

    • 1 1/2 cup mozzarella cheese

    • 1 tablespoon Italian seasoning

    • 1/4 tablespoon salt

    • 1/3 tablespoon garlic powder

    • 2 tablespoons olive oil

Directions

  • Set temperature of the oven to 375°F.

  • Add the ground beef, bread crumbs, egg, salt, and pepper to a bowl and mash together. Shape the meat into a 1/2 inch thick rectangle shape and place on wax paper.

  • For the filling, add the olive oil to a pan and heat to medium. Add the spinach and cook until it starts to wilt. Set aside and let cool

  • When the spinach has cooled, put it in a bowl and add the mozzarella cheese, Italian seasoning, salt, and garlic powder and mix.

  • Spread the filling evenly over the flattened meat. Roll the meat the long way until it is rolled up like a cylinder.

  • Place the meatloaf into a bread pan and bake for 1 hour.

  • During the last 5 minutes of baking, put the tomato sauce on top of the meatloaf and top it off with the mozzarella cheese.

  • After the meatloaf is cooked, let it cool for 5 minutes and then cut into slices.
