Ingredients

  • 4 cups buttermilk

  • 3 1/2 cups whole wheat flour

  • 3 1/2 cups unbleached all-purpose flour

  • 2 cups raisins

  • 2 large eggs

  • 1/2 cup caraway seeds

  • 3 tablespoons honey

  • 2 tablespoons plus 2 teaspoons baking powder

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon baking soda

  • Cooking spray

Directions

  • Preheat the oven to 375°F. Spray two 9 x 5 inch bread pans with cooking spray, and coat them with a small amount of flour.

  • Combine the honey, buttermilk, and eggs into a medium bowl, and stir the ingredients together using a spoon. Combine the flours, baking soda, baking powder, raisins, salt, and caraway seeds into a large bowl and stir in the buttermilk mixture. No kneading of the dough is necessary. A small amount of flour may be added at this time if the dough is too thin.

  • Place half of the dough into each bread pan and bake for 1 hour and 15 minutes. Remove the pans from the oven when a toothpick inserted into the center comes out clean. Allow the bread 15 minutes to cool before removing the loaves from the pans.
