Ingredients

  • 1/4 cup flaked coconut

  • 6 slices whole grain bread

  • 3/4 cup cottage cheese

  • 1/2 cup finely diced fresh pineapple

  • 1/2 cup chopped roasted macadamia nuts

  • 1/2 cup finely chopped ham

  • 2 tablespoons finely chopped green onions

Directions

  • Add the flaked coconut to a small frying pan. Toast the coconut over medium to low heat while stirring. Remove from heat when golden brown.

  • Toast six slices of whole grain bread and slice them diagonally to form a total of 24 triangles. Each slice of bread should be cut into four triangles.

  • Spoon a dollop of cottage cheese onto each triangle and then add pineapple, macadamia nuts, ham, and green onions to the top.

  • Sprinkle the toast with coconut and serve.
