Ingredients

  • 1/4 cup honey

  • 2 tablespoons soy sauce

  • 1 clove garlic, minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 acorn squash (2 1/2 pounds total) or 1 butternut squash (2 1/4 pounds)

Directions

  • Mix all ingredients except for the squash in a large bowl.

  • Peel and cut the squash in half to remove the seeds.

  • Slice the squash into rings about 1 inch thick and coat the rings with the honey mixture.

  • Place the squash rings on a baking sheet greased with butter and drizzle with additional honey mixture.

  • Set an oven to 350°F and roast for 40 Minutes or until the squash is tender. Turn the rings once while roasting.
