¼ cup onion, minced
3 egg whites
½ cup baby spinach leaves, chopped
2 medium tomatoes, chopped
¼ cup crumbled feta cheese
Salt to taste
Black pepper to taste
Spray a medium pan with oil over medium heat.
Sauté the onions for about 5 minutes.
Lower the temperature and add the egg whites, tomatoes, spinach, and half of the feta cheese. Cook for 2-3 minutes.
Remove from heat and sprinkle the remaining feta cheese on top as well as salt and pepper to taste.
