Ingredients

  • 15 large eggs, beaten

  • 1 green bell pepper

  • 1 cup shredded cheddar cheese, low fat if possible

  • 1/4 cup feta cheese, optional

  • Garlic powder to taste

Directions

  • Preheat an oven to 375 degrees F.

  • Spray a muffin pan with a non-stick or use liners.

  • Dice the bell pepper and season to taste with garlic powder.

  • Combine the egg and vegetable-garlic mixture and carefully pour into the muffin tins until it fills 2/3 of the space.

  • Bake for 25-35 minutes or until brown.
