3/4 pound shrimp
1/2 cup chopped red onion
6 tablespoons lime juice
1/4 cup chopped cilantro
1 large peeled and chopped mango
1 chopped tomato
1 or 2 seeded (if desired) and chopped jalapeño peppers
3/4 teaspoon salt
Peel and devein the shrimp. Chop the shrimp into small pieces and transfer to a bowl.
Into the bowl of raw shrimp, add the lime juice and stir.
Cover and chill the shrimp until it is pink in color, approximately 2 hours.
Add the onion, cilantro, mango, tomato, jalapeño peppers, and salt, and toss well.
Serve as an appetizer or with tortilla chips as a salsa.
