4 skinless boneless chicken breasts
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1 stalk celery, diced
1/2 onion, diced
1 small apple, diced
1/3 cup seedless grapes, halved
1/2 cup pecans, chopped
1/2 teaspoon curry powder
3/4 cup mayonnaise
Preheat an oven to 350°F
Place the chicken in a baking dish and coat with olive oil, salt, and pepper.
Cook for 20-25 minutes or until no longer pink in the middle.
Allow the chicken to cool completely.
Meanwhile, combine the rest of the ingredients in a bowl.
Dice the chicken and add it to the mixture.
Chill for 1-2 hours or until ready to serve.
Serve on top of a garden salad (gluten free) or on choice of bread in a sandwich.
