Ingredients

  • 1 can pinto beans

  • 1 can black beans

  • 1 can corn

  • 2 cans diced tomatoes with green chilies

  • 1 packet ranch dressing mix

  • 1 packet taco seasoning

  • 1 cup water

  • 1 bag vegetarian ground beef substitute

  • 2 medium raw onions

  • 1 jalapeño pepper, chopped (optional)

Directions

  • Sautee the onions and jalapeño (optional).

  • Add the vegetarian ground beef substitute, taco seasoning, ranch dressing mix, and water to the sautéed onions.

  • Without draining, add the remaining ingredients (pinto beans, black beans, corn, and diced tomatoes with green chilies).

  • Bring to a boil and then simmer for 30 minutes.
