Ingredients

  • 1 cup water

  • 1/2 cup sugar

  • 1 vanilla bean, split and scraped

  • 4 large peaches, pitted and quartered

  • Mint or cinnamon, for garnish

Directions

  • Add the water, sugar, vanilla bean, and vanilla bean scrapings into a saucepan. Stir the mixture over low heat until the sugar dissolves. Allow the liquid to simmer for 10 minutes or until the liquid becomes thick. Add the peaches, and continue to cook over low heat for 5 minutes until peaches are poached.

  • Transfer the peach sauce mixture to small dessert bowls. Garnish with mint or cinnamon, if desired. Serve immediately.
