Ingredients

  • 2 lemons, quartered, seeds removed

  • 1 tablespoon sugar

  • 1/4 teaspoon sea salt

  • 4 swordfish fillets, each 6 ounces

  • 1/2 teaspoon canola oil

  • 1/2 teaspoon garlic, chopped

  • 1/4 cup parsley, chopped

Directions

  • Heat the oven to 375°F.

  • Add the lemon wedges, sugar, and salt to a bowl and toss to coat. Add the lemons to a shallow baking dish, cover, and roast for about 1 hour or until soft and lightly browned.

  • In a broiler or grill, position the rack 4 inches from the heat source and coat a baking pan with cooking spray.

  • Add the swordfish fillets to the baking pan, brush with canola oil, and top with garlic. Broil for about 5 minutes on each side or until the fish is opaque when tested with the tip of a knife.

  • Serve with a roasted lemon wedge and parsley.
