Ingredients

  • 1 cup cooked sweet potatoes, mashed

  • 1/2 cup mashed banana

  • 1 cup evaporated milk

  • 2 tablespoons packed brown sugar

  • 2 egg yolks, beaten

  • 1/2 teaspoon salt

  • 1/4 cup raisins

  • 1 tablespoon sugar

  • 1 teaspoon ground cinnamon

Directions

  • Preheat an oven to 300 degrees F.

  • In a medium mixing bowl, combine the mashed bananas and sweet potatoes. Add the evaporated milk and stir until smooth.

  • Stir in the brown sugar, beaten egg yolks, and salt.

  • Pour this mixture into a nonstick casserole dish.

  • In a separate bowl, combine the raisins, sugar, and cinnamon. Sprinkle this over the top of the banana and potato mixture.

  • Bake 45-50 minutes or until a toothpick placed in center comes out clean.
