Ingredients

  • 1 box whole wheat penne pasta

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 cup sweet onion, chopped

  • 1/4 cup garlic, minced

  • 2 tablespoons olive oil

  • 1 cup low-fat mixed Italian cheese, shredded

  • Red pepper flakes (optional garnish)

Directions

  • Cook the pasta until tender. Drain.

  • In a large pan over medium-low heat, cook the chopped sun-dried tomatoes, garlic, and sweet onions in olive oil. Reduce the heat when the onions are translucent, cover, and stir occasionally.

  • Add the penne to the tomato mixture and increase the heat, stirring well. When heated through, remove from the stove top and add cheese.
