Ingredients

  • 1 head garlic

  • 4 tablespoons extra-virgin olive oil, divided

  • Juice of 1 lime

  • 2 tablespoons red wine vinegar

  • 1 tablespoon fresh ginger, grated

  • 1 tablespoon toasted sesame oil

  • 1 tablespoon reduced-sodium soy sauce

  • Freshly ground black pepper, to taste

Directions

  • Preheat the oven to 400 °F. Remove papery skin from the garlic head, but do not separate the cloves. Expose the cloves by slicing off the tip of the garlic head.

  • Place the garlic on aluminum foil, and coat with the tablespoon of olive oil. Wrap in foil, and bake for 40-60 minutes or until soft. Remove from the oven, unwrap, and allow the garlic to cool.

  • Squeeze the garlic from the skins into a food processor. Add the remaining olive oil and next the 5 ingredients to the processor, and process until smooth. Season with the pepper, to taste.
