Ingredients

  • 1 pound lean ground beef

  • 1 small onion (chopped)

  • 3 cloves garlic (minced)

  • 1 can diced tomatoes (undrained)

  • 1 1/4 cup water

  • 8 ounces tomato sauce

  • 1 tablespoon dried parsley flakes

  • 1 teaspoon dried basil leaves

  • 1 teaspoon dried oregano leaves

  • 1 teaspoon salt

  • 2 1/2 cup broken whole wheat lasagna noodles

  • 1 cup fat-free cottage cheese

  • 1/4 cup fat free grated Parmesan cheese

  • Dash of black pepper, (optional)

  • 1 egg

  • Shredded fat free mozzarella cheese, for garnish

Directions

  • In a large skillet, brown the beef with onions and garlic, then drain.

  • Stir the next seven ingredients (tomatoes through salt) into the mixture.

  • Mix in the uncooked pasta.

  • When the mixture begins to boil, reduce the heat, cover the skillet, and allow the mixture to cook until the pasta softens (about 20 minutes).

  • Meanwhile, in a medium bowl, mix the cottage cheese with the Parmesan and stir in the egg. Top with pepper to taste.

  • Scoop the cheese mixture with a tablespoon and drop it onto the pasta.

  • Cook for 5 more minutes with the skillet covered.

  • Sprinkle the mozzarella cheese over the lasagna and serve.
