Ingredients

  • 2 pounds large deveined shrimp, tails removed

  • 2 cups brown rice

  • 1 can diced tomatoes, 15 ounces

  • 3 cloves garlic

  • 1/4 teaspoon dried basil

  • 1/4 teaspoon oregano

  • 1/2 teaspoon lemon-pepper seasoning

  • 2 cups cooked soybeans

  • Cooking spray

Directions

  • Boil 2 cups of water. Add the rice and soybeans and cook for 40 minutes.

  • In the meantime, rinse the shrimp and add the lemon pepper seasoning.

  • Ten minutes before the rice is done, spray a skillet with cooking spray and sauté the shrimp until pink. Add the cooked rice, tomatoes, garlic, basil, and oregano. Stir and cook for five minutes.
