Ingredients

  • 1/4 teaspoon whole cumin seeds

  • 1 tablespoon butter

  • 3 large carrots, peeled and chopped

  • 1/4 cup orange juice

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 lime, zested and juiced

  • 1/4 cup water

Directions

  • Toast the cumin seeds in a covered medium pan on low heat. After the seeds have started to pop, add the butter and melt until it becomes foamy.

  • Add the carrots, orange juice, ground cumin, salt, pepper, and water, and simmer for about 10 minutes while covered.

  • Add the lime zest and continue simmering for about 5 minutes, until the carrots are soft.

  • Cool and sprinkle lime juice over the carrots just before serving.
