Ingredients

  • 4 cups rhubarb, diced

  • 1/2 cup sugar

  • 1/4 teaspoon cinnamon

  • 1/2 teaspoon vanilla

Directions

  • In a medium saucepan, combine the rhubarb, sugar, and cinnamon over medium-high heat. Once the mixture begins to simmer, reduce the heat to low-medium and cook for 5 minutes or until the rhubarb begins to fall apart.

  • Once the rhubarb begins to break down, remove the fruit mixture from heat, and stir in the vanilla. Pour 1/2 cup of the mixture into 4 small bowls.
