Ingredients

  • 2 tablespoon butter

  • 2 cup uncooked quinoa

  • 2 cups vegetable broth

  • 2 teaspoons chopped garlic

  • 2 tablespoons chopped fresh parsley

  • 1/2 tablespoon chopped fresh thyme

  • 1/4 teaspoon salt

  • 1 large onion, finely chopped

  • 1/4 cup fresh lime juice

Directions

  • Heat the butter in a saucepan over medium heat and add the quinoa, stirring well for 5 minutes or until lightly browned.

  • Add the vegetable broth and stir until it boils. Cover, reduce to a simmer, and cook for 15 minutes or until quinoa is tender.

  • Ladle the soup into a bowl and add the garlic, parsley, thyme, salt, and onion, stirring well. Sprinkle lemon juice on top and serve.
