Ingredients

  • 2 tablespoons flour

  • 1 teaspoon salt

  • 1/2 teaspoon cayenne pepper

  • 1 pound chicken breast, boneless, skinless, cut into 1 1/2-inch pieces

  • 2 tablespoons canola oil

  • 1 tablespoon curry powder

  • 1 medium onion, sliced

  • 2 garlic cloves, minced

  • 1 cup chicken broth

  • 1/3 cup golden raisins

  • 1 1/2 tablespoons tomato paste

  • 1/4 cup cilantro, chopped

  • 1/4 cup plain nonfat yogurt

Directions

  • Prepare a mixture of flour, salt, and cayenne pepper in a plastic bag or container. Coat the chicken pieces with this mixture.

  • In a large skillet, heat the oil over medium to high heat.

  • Cook the chicken in the oil until browned and then remove it from the skillet.

  • Add the curry powder, onion, and garlic to the skillet and cook for 2-3 minutes.

  • Add the chicken broth, raisins, and tomato paste and stir.

  • Add the chicken and cook uncovered for 10 minutes.

  • Garnish with cilantro and yogurt.

  • Serve with steamed white rice or naan.
