Ingredients

  • 8 slices Italian bread

  • 4 ounces thinly sliced prosciutto

  • 1 1/4 cups Fontina cheese, shredded

  • 1/2 cup baby arugula leaves

  • 1/4 cup fig preserves

  • Olive oil-flavored cooking spray

Directions

  • Turn on a panini grill and allow to preheat.

  • On four of the eight bread slices, place equal amounts of prosciutto, Fontina cheese, and arugula.

  • On the remainder of the bread slices, spread one tablespoon fig preserves on one side in equal amounts.

  • Use cooking spray to coat both outer sides of the sandwiches before placing on the panini grill.

  • Leave sandwiches on the grill for three minutes. They should be golden brown and cheese should have melted when removed from heat.
