Ingredients

  • 6 ounces uncooked penne pasta

  • 1/2 pound fresh mushrooms, sliced

  • 1 tablespoon olive oil

  • 1 can (14.5 ounces) diced tomatoes, undrained

  • 1 teaspoon dried basil

  • 1/4 teaspoon salt

  • 1/3 cup crumbled feta cheese

Directions

  • Bring water to a boil and cook the pasta according to package instructions.

  • In a sauté pan, add the oil and sauté the mushrooms over medium heat for about 5 minutes.

  • Add the basil, salt, and tomatoes and cook for an additional 5 minutes.

  • When the pasta is cooked, drain it, then add it to the sauté pan along with the feta and stir.
