Ingredients

  • 1 cup basmati rice

  • 1 cup whole milk

  • 1/2 cup heavy cream

  • 3/4 cup coconut milk

  • 2 ounces sugar

  • 1/4 teaspoon ground cardamom

  • 1 1/2 ounces golden raisins

  • 1 1/2 ounces chopped unsalted pistachios

Directions

  • Boil the rice in the milk in a large nonstick pan over medium heat.

  • Lower the heat and simmer for 5 minutes until the mixture condenses.

  • Add the heavy cream, coconut milk, sugar, and cardamom.

  • Cook on a medium heat until the mixture condenses again.

  • Remove from heat and garnish with raisins and pistachios.

  • Serve warm or cold.
